Winter Carrot Harvest

Carrot harvest right before the snow! Nebraska gardeners can get a late round of cold hardy veggies like carrots planted by counting backward from first average frost date, planting them around August 1st. These roots get sweeter with cold temps & keep well in the garden til the ground freezes! Why are they sweeter? Carrots are one of the heartier vegetables and their flavor changes [for the better!] as they adapt to survive those colder temps. Sweet, huh?
